2 c. sugar
4 eggs
1 c. oil (canola)
1 tsp. vanilla
2 c. flour
3 tsp. cinnamon
2 tsp baking soda
1 tsp. salt
3 cups grated carrots

Beat toghether sugar, eggs, oil, and vanilla. Then add flour, cinnamon, soda, and salt. Stir in 3 cups carrots (about 1 pound). Bake in 13x9 pan for 40 - 50 minutes or until done in 350' oven.
*I have baked this in a bundt pan but it fell some due to the altitude.
You will have to play with the recipe to compensate.
