1 1/2 cups brown sugar
1/2 cup butter or margarine
2 cups all purpose flour
1 egg, beaten
1 cup sour milk or sour cream
1 tsp baking soda
pinch of salt
1 tsp vanilla
2 cups rhubarb, cut in small pieces
Topping: 1/2 cup chopped walnuts, 1/2 cup brown sugar, 2 Tbsp butter or margarine, 1 tsp cinnamon combined to create a crumble mixture.
Cream sugar and butter or margarine, add egg. Combine the rest of the ingredients adding the rhubarb last and mix well. Pour mixture into a canola oiled 9x13 pan. Before baking sprinkle the topping mixture over the batter. I also sprinkle 2 Tbsp granulated sugar over the topping mixture before baking, it gives the cake top more crispness. Bake in a 350 degree oven for 35 to 40 minutes.
