3 egg whites
4 fresh Limes (or 4 tbsp. Nellie & Joe’s Famous Key West Lime Juice)
4 cups Unsalted Peanuts (cocktail shelled style – 16 oz.)
6 tbsp. Splenda™ Baking Blend (or Sugar)
4 tbsp. Chili powder
½ tbsp. Cayenne Pepper
1 tbsp. Salt


 Pre-heat oven to 300F
 Whip egg whites and lime juice until frothy in a large bowl, and set aside.
 Mixed chili powder, cayenne, salt, Splenda baking blend or sugar, in separate bowl, and set aside.

 Add peanuts to egg white and lime juice mix, and toss thoroughly.
 Combine all ingredients into bowl that has the peanut. Mix and toss thoroughly. (Use a fork by scraping from the sides to underneath and then up, so you don’t bust your nuts!).

 Use a full size baking sheet (hotel pan) and place parchment paper over surface for very easy cleanup.
 Spread mixture over surface of pan using a non-slotted (no holes if you have one) spatula, so the peanuts are one layer thick. DON’T CRUSH YOUR NUTS!

 Cook at 300F for 15 minutes and then mix nuts around and respread. Don’t take all day to do it!
 Place bake in oven and bake for additional 45 minute at 275F.
 When finished…..Scrape nuts from pan with spatula and place in bowl.
 Continue to toss nuts for a few minutes with a fork, so they don’t stick together.
