Miscellaneous > Munn´s Margarita Marinade

4 cloves of fresh garlic
¼ sweet red bell pepper
¼ sweet yellow bell pepper
¼ sweet orange bell pepper
½ - 1 red hot chili pepper (not a band member)
1 teaspoon salt
The juice of ½ fresh lime
4 tablespoons of melted butter
¼ teaspoon of liquid smoke
2-3 shots of Jose Quervo Gold Tequila

Blend together the ingredients and marinate the meat along with the rest of the peppers cut into large pieces along with chunks of red onion, yellow summer squash, zucchini, portabella mushrooms, and cherry tomatoes.

Put the vegetables on skewers and then on a preheated grill and cook covered; rotate every 5 minutes or so. Don’t worry if the peppers burn a little, it adds more flavor but you will have to remove the burnt skin. Once they are almost done to the point you want, put them off to the side and grill the meat. Once the meat is done, add thick slices of ripe tomato to the grill for about a minute on each side.

Serve the steak with the roasted vegetables, grilled tomato slices and fresh, ripe avocado.
