Side Dish > Mandarin Salad

1/2 C. sliced almonds
2 T. sugar
1/2 head iceberg lettuce
1/2 head romaine lettuce
1/2 C. chopped celery
2 whole green onions, chopped
1 11 oz. can mandarin oranges, drained

Dressing:
1/4 C. veg. oil
2 T. vinegar
2 T. sugar
1/2 t. salt
dash of pepper

In a small pan over meadium heat, toast almonds and sugar, stirring constantly till almonds are coated and sugar is dissolved. Watch carefully as they will burn easily. Let cool completely before adding to salad. Mix all dressing ingredients and let cool in fridge till ready to use. Mix lettuces, celery and onions. Just before serving add almonds and oranges. Toss with dressing.
